Ever since I bought a Vitamix I’ve sort of turned into a smoothie nut. Since I’m very much a creature of habit, I tend to make the same ones over and over again. Current obsession: my “date with fate” smoothie that has dates, almonds and bananas.
While that smoothie is great for busy mornings (it’s pretty heavy and can keep me full for at least a couple hours), this rambutan and water chesnut smoothie is perfect for a light, refreshing drink on a hot and humid afternoon.
Rambutan and Water Chesnut Smoothie
* 1 1/2 cups cold water
* 10 canned water chesnuts
* 10 canned rambutans and 1 1/2 cups of the syrup
* 2 cups ice
Combine all ingredients in a blender and process until smooth.
